Crock Pot Recipe Search

The first part of this blog is going to be a rant...I'm sorry if it is tiresome!

I have been looking at Crockpot recipes. The true reason I do Crockpot is for the pleasure of putting something in it and then having it cook while I'm at work all day. However, some of the recipes that I'd like to try only cook for a few hours like 4 or 5. That's great if I were home, but doesn't help me much if I'm gone over 8 hours!

That being said, here's a recipe I found on Allrecipes.com that I might try this week:

Chicken and Fresh Tomato Stew

Ingredients
5 potatoes, peeled and cubed
1 1/2 cups chopped fresh tomato
1 cup sliced carrot
1 onion, chopped
2 bay leaves
3 large skinless boneless chicken breast halves
2 (8 ounce) cans tomato sauce
1 (14.5 ounce) can chicken broth
1 1/2 teaspoons Italian seasoning
1/4 teaspoon red pepper flakes
water, as needed

Directions
Combine the potatoes, tomato, carrot, onion, and bay leaves in a slow cooker. Place the chicken breasts atop the vegetables. Stir the tomato sauce, chicken broth, and Italian seasoning in a bowl; pour over the chicken breasts. Add water as needed to assure the chicken is completely covered. Cook on Low for 6 hours. Remove the chicken breasts and cut into bite sized chunks and return to slow cooker. Continue cooking until the vegetables are tender, another 1 to 2 hours.

    Do you know the secret of OLD crockpots? Some years ago, crockpots used to be set for lower temps, making many recipe 8-10 hours. Most people used them exactly as you describe--set it in the a.m.; come home to a hot meal in the p.m. A higher cooking temp was mandated for safety reasons. I think it was as long ago as 1980. You might be able to find an older c.p. along with recipe books from that time.

    I used to have a newer 6 quart crockpot that had settings for high and low. We could leave on low for all day and the food would still get cooked, but not overcooked.

    Joan, I must have started out with one of those older Crockpots because that is what I did and loved it. I figured if I was going to put it in the cp, I expected it to cook all day. Mine has settings for both high and low, but so many of the recipes are for 4-5 hours.
