Attempting Pie Crusts

I have three cooking goals this summer: 1)homemade noodles, 2)pie crusts, and 3)homemade pizza. Last night I worked on the pie crusts.

I have tried to make pie crusts and they weren't flaky and I think I didn't roll them out thin enough. I tried again last night. We are having quiche for lunch using one of them, so we shall see. I guess practice makes perfect.

    Pie crust is one of those things I always wished I could have learned directly from someone who knows all the tricks.

    You've got to use cold, cold water and don't over work the dough. Smile

    My sister's the queen of pie crusts. Water from ice water (faucet's not cold enough), and you add just enough to the butter or lard/flour mixture to hold it together. Also try to make the crust on a good weather day - too humid and the crust won't get flaky.
