Crazy ways to use what is left in your fridge

June 7th, 2013 at 09:14 pm

Pretty cheap jewelry suggested I start this...crazy ways to use up what is in the fridge so here goes...how do you use up what you have?

I often make frittatas or egg casseroles and use up vegetables, meats, and breads with eggs and milk and we often use bits and pieces of leftover cheese. If we have quite a few vegetables, I often make a stew.

What do you do?

Pot pie, soup or stew, egg scrambles.

Dried bread is for french toast.

I don't do anything crazy but I make stroganoff with roast and use other leftovers for breakfast burritos. If we have leftovers pinto beans I make burritos and tostadas with re-fried beans. Veggies are used in soups or stews or used asxa side dish for the next meal. Apples are used for cinnamon apples or cobbler. Also cherries that need to be used soon.

Wraps can hold bits of leftovers and depending what spice is sprinkled atop you've a Tex-Mex or French or Sicilian. Spanish rice, Paella, Pilaf combine small amounts fish, pork and chicken. Stir fry for Chinese or battered & fried bits turn into Tempura. If you have nice rolls nearly anything can be loaded to create your version of Subway.

Depends on how far gone. I do a fair amount of trimming because its not a compost bin in disguise, but a vegetable stock for bits. If its not far gone, just oldish, I like roasting a veg and making a tahini sauce for it. Roasted cauliflower in tahini is the bomb. Chop salad of different items in oil and vinegar, fresh if you have to get through a lot of it, but in a ratatouille if you are moving things along.

I'm discovering the total wonderful all-encompassing solution of frittata. Da^m them Italians are genius.

I just sautéed the celery, onion and broccoli that was in my fridge and will put it on mashed potatoes (with cheese) for lunch.

I also used some of the celery and onion to make pumpkin soup, which also used up one of those many cans of pumpkin in my fridge!

Other favorite ways to use up leftovers -- wraps, breakfast casseroles, strange and wonderful pizzas, spaghetti sauce! And fruit, of course, is great in smoothies.

Oh, I almost forgot -- fried rice is a great favorite, too!

My family will eat just about anything if it can be wrapped in a flour tortilla or as an ingredient in fried rice. Consequently, most of our leftovers are consumed in one of these two dishes.

Sounds like a lot of creativity going on!

Then there is the Korean, paleo friendly use of romaine. Put bit of meat, bit of rice (or whatever mimipaula1 is cooking), hit of soy sauce on a lettuce leaf, fold into a bit (ssam), shove into mouth. Smile
